ORANGE PECAN MUFFINS |

1 cup Yelton's Best Cornmeal |

1/2 cup cooking oil |
|
1 cup sugar |
|
2 eggs, beaten |
|
2 cups Yelton's Best Flour |
|
2/3 cup buttermilk |
|
1/2 teaspoon salt |
|
2 tablespoons grated orange rind |
|
1 teaspoon soda |
|
1 cup finely chopped pecans |
|
Heat oven to 375°. Grease then heat miniature or regular muffin pans for 3 or 4 minutes. Sift together dry ingredients then add liquids. Mix in orange rind and nuts. Fill muffin tins 2/3 full. Bake 10 to 12 minutes. While hot spoon orange sugar mixture over muffins. |
