ORANGE PECAN MUFFINS

1 cup Yelton's Best Cornmeal 

1/2 cup cooking oil 

1 cup sugar 

2 eggs, beaten

2 cups Yelton's Best Flour 

2/3 cup buttermilk

1/2 teaspoon salt 

2 tablespoons grated orange rind

1 teaspoon soda 

1 cup finely chopped pecans 

 

Heat oven to 375°. Grease then heat miniature or regular muffin pans for 3 or 4 minutes. Sift together dry ingredients then add liquids. Mix in orange rind and nuts. Fill muffin tins 2/3 full. Bake 10 to 12 minutes. While hot spoon orange sugar mixture over muffins.

Juice of 2 oranges
