CORN MEAL PUFFS

1 10 ounce package frozen chopped spinach

1/2 cup chopped onion 

1/2 cup buttermilk

3 slightly beaten eggs 

1/4 cup melted margarine 

1/2 cup parmesan cheese 

1 teaspoon garlic salt 

1/2 cup grated cheddar cheese 

1 teaspoon pepper 

1 V2 cups Yelton's Best Corn Meal Mix

 

Cook spinach according to package directions. Drain well & press out excess liquid. Combine with all other ingredients and chill for 2 hours. Shape dough into 1 inch balls. Chill or freeze until ready to bake. To serve, place on greased baking sheet. Bake at 350° until brown, about 12 to 15 minutes. Serve warm. Yields 60 puffs.
